Superfood Berry Protein Energy Bites

I almost called these 24-hour Energy Bites (although I swear, they are the quickest, simplest thing to throw together- double time for getting your hands dirty). I make a double batch and they still don't last longer than a day in our house. My husband and I grab them on the go for breakfast, in lunches, and after workouts and the next day they're gone. It's hard to even feel bad about it because I cram every last ounce of superfood, superprotein (I made that word up) deliciousness into these bite sized balls. So, whats so rad about them?
They are absolutely cram packed with superfoods. Superfoods are basically good for you goodness on crack. It's possible I have more superfood supplements than actual food in my pantry (thank god for Thrive Market
), but same/same - it's made into whole food not blended into a smoothie (not my jam, with the exception of my Pure Change wellness shake in the morning, liquid food just doesn't do it for me).
First, there is so much protein because I insist on basically being a walking advertisement for the keto diet while simultaneously eating all the carbs. The protein comes from creamy, drippy almond butter (because peanut butter kills) and chia seeds
(which have this addictive texture I cannot get enough of- there is something so satisfying about that popping crunch sound they make). And to top it off, a scoop of protein powder because protein is life. Literally, it's what builds all the things that make life happen. This would be the perfect place to insert a nerdy rant about cellulose, but I digress.
Then I stuff them full of all the superfoods: goji berries, maca powder, raspberries- all loaded with antioxidants and basically just one big detox for all the cells.
Goji berries are an amazing source of anti-inflammatory antioxidants and have been used in Chinese medicine for thousands of years.
Maca powder found its way into my cupboard after hearing Lauryn Evarts talk about how its basically powdered viagra. Now, not that the Mr. needed any help in that department, but this little tidbit definitely got my attention. maca powder
is an adaptogen which means it helps balance hormones (something I am all about, mix it with my other favorite
for balancing hormones as I talked about here before you go to bed). Adaptogens "help the body deal with stress and boost energy, endurance and libido". Boom!
Raspberries - Did you know that all berries are superfoods? They contain high amounts of antioxidants. Raspberries are my favorite and they work nicely in these bites to give them a little bite without getting all sticky and mushy.

Superfood Protein Energy Bites

Ingredients:
1/2 cup creamy almond butter
1/4 cup agave nectar (maple syrup works too)
1 teaspoon vanilla extract
2 scoops protein powder
2/3 cup flaxseed meal
1 cup rolled oats
4 tablespoons chia seeds
1/2 cup goji berries
1/4 cup maca powder
1 package raspberries
4 tablespoons chia seeds
1/2 cup goji berries
1/4 cup maca powder
1 package raspberries
Instructions:
In a large bowl, add almond butter, agave nectar, vanilla extract and protein powder. Mix together well. Add flaxseed meal, Rolled oats, chia seeds, goji berries, maca powder, and raspberries. I get my hands dirty and use them to finish mixing the ingredients together. Form into 12 balls and refrigerate or freeze.
Notes:
Have some fun making these your own. You can use any kind of nut butter or low-glycemic sweetener. You might need to add more wet or dry ingredients to get the consistency just right, as all brands will differ slightly.
